Roast the potatoes and carrots
Preheat oven to 200°C. Toss potatoes and carrots in olive oil, salt and pepper. Roast 25–30 minutes until golden.

Steam the broccoli
With 10 minutes left, steam or boil broccoli 4–5 minutes until just tender. Season with salt.

Cook the steak
Season steak generously. Heat a cast iron pan until very hot. Sear 2–3 minutes each side for medium. Rest 5 minutes.

Slice and serve
Slice steak against the grain. Arrange with roasted veg in a bowl. Season to taste and serve.
